One of the best ways to start your weekend
Are you ready to learn the best way to start the day? This avocado and tomato on toast is what gets me up in the morning. I especially love it on the weekends. It really puts me in the right mood and get's my Saturday off to a great start.
You can substitute the bread for another of your choice. We use Pavilion bakery's brown sourdough. But you can use anything from a rye bloomer to a white sourdough.
- 100g rainbow cherry tomatoes (regular cherry tomatoes are fine if you can't get multi-colored ones.
- 1 Avocado
- Olive oil
- 1/2 Lemon
- Sunflower seeds
- Rock salt
- Brown sourdough bread
Slice the bread at a nice angle to give the bread a sort of elongated side look. Pop them in the toaster.
Peel the avocado and slice. Throw it into a bowl. Add a squeeze of lemon juice (use a sieve to make sure you don't get any pips in there) and a lug of olive oil. Add a handful of sunflower seeds, rock salt, and freshly ground black pepper. Then mash with a fork. you want something in between regular sliced avocado and guacamole.
Chop the tomatoes in half and add to the mix.
Place the toasted bread on a plate. Top with your mixture. Chop some coriander and sprinkle on top. Finish off with a pinch of paprika.
